Brian Etheredge, Capische Owner and Executive Chef, has worked in the restaurant industry since his pre-teen years. He has done every job in a restaurant from washing dishes to management to executive chef.
Brian received his formal culinary training at the Southeast Institute of Culinary Arts in Saint Augustine, Florida, and at the Culinary Institute of Anerica, Hyde Park, New York, where he graduated in early 1996.

- 1997-98 - Max's Cafe and Marketplace, Livingston, New Jersey; Sous Chef and Operations Director
- 1998-2001 - Grand Wailea Resort & Spa, Maui, Hawaii; Sous Chef; Bistro Molokini, Grand Dining Room, Humuhumunukunukuapua'a
- 2001-02 - Capische Restaurant at Ma'alaea Harbor, Maui, Hawaii; Executive Chef
- 2002-Present - Capische Restaurant at The Diamond Resort, Maui, Hawaii; Owner/Chef
Brian was an award winner at the 2001 Taste of Lahaina event and has been a regular celebrity chef at the Taste of Wailea in conjunction with the renowned Maui Film Festival.
